I think everyone’s favorite dessert is kheer (rice pudding). Traditionally this is basmati rice cooked in cows milk with nuts and raisins. Yet cooking kheer with cows milk renders it more difficult to digest. So I am making it with vegan milk. Keep on reading until the end to learn the best way to make the healthy version of this traditional kheer.

The recipe below is my version of kheer.

What makes this vegan kheer so amazing, is that it’s much more healthier than its traditional version, which is full of fat and refined sugar. My kheer is sweetened with Jaggery powder only, and the Peanuts milk works amazingly well here. It’s so rich, creamy and satisfying and at the same time, it is lactose-free and cruelty-free.

How to Make Peanut Milk?

Before we start making Peanut Kheer, we need Peanuts milk. So for that depends on the quantity how much milk you need? Accordingly soak raw peanuts overnight. Next morning if you can, remove the skin of the soaked peanuts and wash them thoroughly in the running water.

Even without removing the skin, you can make the milk. Put these washed peanuts in the blender jug and put three times extra drinking water. Run the machine and then strain this mixture with strainer or cheese cloth. Now you have the peanuts milk to make the kheer.

Extra milk you can pour into any glass bottle or jug and keep in the fridge to use later for other recipes. It is quite easy to make, even anybody can make it.

So my vegan dear friends, now you can get the idea of what kheer is? This vegan kheer is much healthier than the original version of milk kheer. So this way you can enjoy a big bowl of it for breakfast, not only on a festival, but also you can enjoy eating it anytime, when you want to eat something sweet, but healthy.

Rice Kheer-A Vegan Recipe

I did not use any diary here. Also no almond or cashew milk. Thanks to Raw peanuts that are so cheap and available all year to buy from any grocery store. Also they are very affordable in price, means anybody can afford them and make the milk with these peanuts.

Needed Ingredients to Make this Vegan Kheer

  1. Raw Peanuts
  2. Jaggery Powder
  3. Brow/white Rice
  4. Water
  5. Blender to blend the peanuts
  6. Strainer/sieve the peanut mixture
  7. Pressure Cooker
  8. Raisins or any other dry fruit of your choice
  9. Saffron
  10. Almonds for Garnish

Instructions to Make Peanut Kheer-Part One

  1. Soak Peanuts overnight and next day you can remove the skin as much as you can and wash nicely in running water
  2. Now washed peanuts put in the blender jug and and 3 times extra water to blend the peanuts
  3. Blend the Peanuts with water until it becomes like milk
  4. Strain this mixture with cheese cloth or strainer. Then your milk will be ready to use for the Kheer.

Instructions to Make Peanut Kheer-Part 2

  1. Soak some rice in water for 2 hours
  2. Then add into the pressure cooker with some water and give 3 whistles
  3. When the steam is released, then mash rice with potato masher
  4. Now pour required peanut milk and stir nicely. Keep on stirring in every 2 seconds to avoid the kheer to burn
  5. You can add few strings of saffron to give the nice color and aroma
  6. Then add raisins of your choice and also add jaggery powder and stir
  7. Garnish it with almonds or any other dry fruits of your choice
  8. After 2 minutes switch off the stove and serve the kheer hot
  9. Don’t eat or drink anything else for an hour.
