Lauki Ki Sabji in Pressure Cooker

There are many benefits of lauki juice or bottle gourd as it is mostly have in it almost 92% water(Juice).

But there are hardly few people, who know the benefits of this wonderful Vegetable and have it in their diet. Majority of the people don’t know it and many don’t use it in their cooking as well.

Needed Ingredients

  1. 300g lauki/ bottle gourd (after washing & Peeling and then cut it into small pieces)
  2. ½ cup water
  3. 2 medium-sized tomatoes (finely chopped)
  4. One green chili (finely chopped)
  5. Two tablespoon Ginger (finely chopped)
  6. 1/2 teaspoon Turmeric powder
  7. ½ teaspoon jeera sabut/ cumin seeds
  8. ¼ teaspoon kali mirchi/ black pepper
  9. ½ teaspoon Pink Salt (according to taste)
  10. One medium size chopped onion
  11. One inch chopped ginger

How to Make Lauki Ki Sabji in Pressure Cooker?

  1. Heat oil in a 2 liter pressure cooker. Add 1 teaspoon cumin seeds & let them splutter
  2. Add One spoon Olive oil
  3. Then add one chopped onions.
  4. Now add 1 teaspoon finely chopped ginger and 1 to 2 green chilies (chopped) and sauté for some seconds
  5. Now add chopped tomatoes and sauté again for few seconds
  6. Now add ½ teaspoon turmeric powder
  7. One teaspoon coriander powder
  8. Add Pink salt according to your own taste
  9. Sauté tomatoes and add chopped 300g lauki (bottle gourd or ghiya or dudhi) and saute about a minute
  10. Now Pour 1 cup water and stir nicely
  11. Pressure cook lauki sabzi for 2 to 3 whistles or 7 to 8 minutes on medium flame till the lauki is cooked well and becomes mushy
  12. When the pressure automatically releases, then only open the lid of the Pressure cooker
  13. Finally add chopped fresh coriander leaves at this step and mix well
  14. Serve lauki ki sabzi hot with some phulkas or chapatis.
